offers a summer class in Verona, Italy, a beautiful and historic Northern
Italian city. The syllabus includes discussions of the epidemiological and
preclinical evidence related to the health benefits of the Mediterranean
diet against chronic diseases (cancer, obesity, diabetes, etc) as well
hands-on culinary experiences. Students will have the opportunity to learn
about the approach to food preparation, agriculture and community-based
cultural activities characteristic to the Mediterranean region. Excursions
include meetings with food producers, visits to olive oil, pasta, and cheese
processing plants as well as touring of historic sites.
This course is designed for students who have minimum junior standing,
junior, and senior students in nutritional sciences, biological,
physiological and related biomedical sciences, as well as undergraduate
students who have a comparable background in the science and health fields.
This unique program begins on May 19th 2014 with coursework at the
University of Arizona in Tucson, then continues from May 25 through June
20th, 2014 in Verona, Italy. Students not residing in Tucson will have the
option of online participation during the first week of classes.
