The syllabus includes discussions of the epidemiological and preclinical evidence related to the health benefits of the Mediterranean diet against chronic diseases (cancer, obesity, diabetes, etc) as well hands-on culinary experiences. Students will have the opportunity to learn about the approach to food preparation, agriculture and community-based cultural activities characteristic to the Mediterranean region.
