<p class="MsoNormal"><font color="#000080" face="Arial">Summary for June 24th School of Plant Sciences Faculty Research Forum lead by Monica Schmidt:</font></p>
<p class="MsoNormal"><font color="#000080" face="Arial"></font> </p>
<p class="MsoNormal">One in every 4 deaths is attributed to coronary heart disease, making it the leading cause of death for Americans. Foods manufactured with a healthier soybean oil will largely contribute to the reduction of the incidence of coronary heart
disease in the US as 25% of calories consumed by Americans are derived from plant oils - the majority of that derived from soybean as it is the dominant US oil crop. Trans fats are produced from unsaturated fatty acids during the hydrogenation process of
baked or fried foods. Soybean’s oil composition is: 14% saturated fats, 24% oleic acid (18:1), 54% linoleic acid (18:2) and 7% linolenic acid (18:3). We have produced soybean lines that are both rich in the healthy antioxidant b-carotene and have an altered
oil composition with significantly reduced unsaturated fatty acids (12% saturated, 45% oleic, 37% linoleic, 6% linolenic). The b-carotene seeds also have an increase in protein composition (43% protein vs wildtype 38%). Our b-carotene transgene trait also
resulted in similar unexpected phenotypes of high protein and low unsaturated fatty acid oil composition in another oilseed crop Camelina sativa. The alteration of both lipid composition and protein/oil ratios by enhanced b-carotene accumulation in the seed
deserves further exploration as it may reveal an unknown level of lipid regulation in agriculturally important oil seed crops. We propose to take a systems biology approach to investigate the cellular mechanism for lipid regulation in soybean by combining
our b-carotene trait with USDA accessions low in linolenic acid. </p>
